On 8th,the China Food industry Association White liquor Specialized Committee promoted the first method in our country of how to know the year of white liquor - “the method of the volatility coefficient”,which was invented by Sichuan Jiannanchun Winery and has applied for national invention patent. According to this standard 15-year age Jiannanchun liquor has been producing.
It was been introduced by Mayong,deputy Secretary-General of the China Food Industry Association, Executive Vice President of Professional Committee of Chinese that liquor stored longer, show more soft and mellow. Since the late 1990th combined with chinese traditional craft and reference to the year as a standard to judge liquor quality and the price ,Guizhou Maotai ,Wuliangye and other famous wineries has produced 10-year-age and 20-year-age white liquor popular in the high-end consumer groups,some of them produce couldn’t meet the demand for a long time. According to the sample survey by China Food Industry Association, nearly 60% among the the top 100 enterprises have presented the vintage liquor, annual sales is less than 5 billion yuan.

Researchers found after years of tracking and detecting volatile characteristics of trace aroma substances of white liquor that liquor stored longer, trace aroma substances, alcohol molecules and water molecules become more closely,meanwhile evaporation coefficient of trace aroma substances of white liquor coefficient decreases as the storage time become longer and longer.
By this method,we can know the production year of liquor by comparing the standard curve of the storage time with evaporation coefficient of some substances.
Detect evaporation coefficient of various trace elements of various specification and storage time,establish a corresponding database,compare the corresponding data in the database with evaporation coefficient of some trace elements of year liquor which is going to be identified.Through this process the corresponding storage time coming out.It is a fast, accurate, convenient and high sensitive method,also has strong applicability. It solve the different problem that hard to identify the aging vintage and provide a scientific basis for producing and testing the aging vintage. Researchers have found by researching and testing dozens of aging vintage on the market that the evaporation coefficient of Wuliangye,Guizhou maotai are the same as the general liquor.
